Italian Tomato Salad, Cheap Recipes

Italian Tomato Salad
1 large tomato (or more if you'd like)
1/2 medium onion
Salt, pepper to taste
Very large pinch of oregano  
Vinegar (I use red wine)
Oil
Slice tomato and place on a flat dish. (I use a dinner plate)  Slices can be as thick or thin as you like.  Thinly slice onion and spread slices among the tomato.  Top with salt, pepper, oregano, oil and vinegar.  When combining oil and vinegar a good proportion to follow is half as much vinegar as oil.  Let sit on the counter for an hour, then turn slices upside down.  Another hour on the counter and you're ready to feast.
 Feeds four.

  1. Feeds four? Am I very immodest when saying that this would be a good portion for one person
    (myself) on a hot summer day? Together with a piece of baguette. So good and tasty!
    I often prepare this when I have tomatoes, but i usually take fresh basil as a herb.
    Oregano is growing wild here, plentiful. Bees love it. Indispensable in Italian cuisine !

    1. LOL! I should have said if this is a side dish it feeds four. But, I had a third of a tomato for lunch yesterday with Italian bread to soak up the dressing. We have what's called beefsteak tomatoes that are very large and I would use one for this salad as a side for my family of six. Of course the little ones didn't eat it so they got just plain tomato. As adults, they all eat it. And no, you are not immodest. It's so good it goes down like candy!
