Recipe For a Healthy Dessert

Apricot-Cherry Boats

1 (15 ounce) can apricot halves, drained and pat dry – free [note: juice can be reserved and frozen for another recipe]

4 oz Cream Cheese, softened

1 1/2-2  tablespoons powdered sugar

Maraschino cherries – 89 cents after coupon

Place one apricot half in a food processor along with the softened cream cheese and sugar; pulse until well blended. Spoon the filling into remaining drained apricot halves and top with a maraschino cherry; Cover and refrigerate until ready to serve.
