This version is just as quick and easy as the original version, but with an Old World Italian twist to it. Makes approximately 8 slices.
Left over Italian or French bread
2 eggs
1/2 C milk (or a bit more milk than egg)
1 t vanilla
Generous amount of cinnamon, to taste
Olive oil
Pour about a 1/2 inch of olive oil in a large skillet. Warm it over LOW heat. It will take a while to warm to frying temperature, but high heat will burn olive oil and can start a fire. ( ask me how I know) I know the oil is ready when a small drop of water makes the oil sizzle. It;s the old world way of doing things. If you are not comfortable doing this, this recipe is not for you.
Mix the eggs, milk, vanilla, cinnamon well.
Slice the bread to the desired thickness and coat with the egg mixture. Fry in the oil. Drain and serve with butter and / or your favorite toppings. Yum! And relatively healthy.
